From the Nervous Cook. Peanut Cookies
This is a foolproof, quick and easy recipe given to be me by a friend.
And they are foolproof, quick and easy…… unless you are the Nervous Cook and burn the first batch. The second batch however were perfect. Does that make me a fool?
1 Cup Sugar
1/2 tsp Salt
2 tsp Cocoa
11/2 Cups Peanuts
11/4 Cup S.R. Flour
Beat butter and sugar to cream.
Add salt, cocoa and egg mix well
Add flour and peanuts and combine.
Place teaspoons of mixture on biscuit tray. Leave room for them to spread. Max 9 per tray.
Bake in a moderate oven for 20 minutes.
Tip: Don’t go and hang out the washing and not hear the egg timer go off. If you do, you could be like the Nervous Cook and burn them!
